Coconut Oil Roasted Pumpkin Seeds

I love coconut oil.  My latest predicament was that I didn’t want to use croutons in my salad, but I wanted something crunchy that wouldn’t sog up with the salad dressing.  I scanned my cupboards when I came upon a bag of pumpkin seeds from Trader Joes.  They weren’t crunchy enough so I decided to roast them in a bit of coconut oil.  They came out perfect!  They are crisp and crunchy without being oily.
